Food Service Skills Training
VGS’ Food Service Skills Training program provides individuals with the basic skills required to obtain entry-level employment in the food industry as kitchen and dining room employees.
Individuals enrolled in the program will be trained in proper food handling with particular emphasis on food safety and sanitation, using ServSafe® curriculum
approved by the National Restaurant Association.
In addition to sanitation, other topics covered during the training include: basic customer service, food preparation and production, nutrition, serving, inventory, and food storage. The importance of maintaining cleanliness standards in the kitchen and dining room is constantly reinforced through activities including bussing, dishwashing, and equipment sanitation. Individuals learn how to safely and efficiently complete food preparation tasks such as measuring, cutting, and mixing.
While engaged in the training program, individuals will have the opportunity to gain paid
hands-on work experience in VGS’ “Guidance Grill”, a fully operational cafeteria located in
VGS’ East 55th Street Training Center. Under the supervision of the instructor, individuals observe and participate in all aspects of the food-service operation from checking in food shipments to operating the dishwashing equipment; from basic knife safety and usage to recipe execution. Program time is divided into three hours of classroom work and
three hours of hands-on experience.
