Food Processing & Industrial Packaging Skills Training
Food Processing & Industrial Packaging Skills Training provides individuals with the basic skills required to obtain entry-level employment in the food processing and packaging industry.
Participants are trained in proper food handling with particular emphasis on food safety, sanitation, handling, and HACCP (Hazard Analysis Critical Control Point) standards as set forth by guidelines and materials approved by the USDA (United States Department of Agriculture), the ODA (Ohio Department of Agriculture), and ServeSafe® Sanitation and Safety as offered by the NRAEF (National Resturant Association Educational Foundation).
In addition to sanitation, other topics covered include: prevention of food adulteration, time and tempertaure control, ingredient labeling, nutritional labeling, flow charting, pre- and post-operational procedures and inspection, bacterial control laboratory testing, product re-call procedures, and semi-automated equipment operation and maintenance.
The importance of maintaining cleanliness standards in the production facility, kitchen, and transport vessels is constantly reinforced through activities that include following printed instructional guides and maintaining accurate records. Participants learn how to safely and efficiently complete food preparation and packaging under the direct supervision of an instructor, an experienced production manager, and an on-site full-time Inspector from the Ohio Department of Agriculture.
While engaged in the training Individuals have the opportunity to gain paid hands-on work experience in VGS’ Food Production Facility. Under the supervision of the instructor and production manager, individuals observe and participate in all aspects of the food-service operation from checking in food shipments to operating packaging equipment, as well as shipping and logistics. Program time is divided into three hours of classroom work and three hours of hands-on work experience.
